Our garden has produced so many zucchini that it has been difficult to keep up with them. Since I have so many, I have been using them in every way I can think of. I have grilled them, baked them and used them in recipes. My favorite thing to do in the kitchen however, is to bake desserts (I wish this weren’t true, but it is!), so of course I looked for something rich and delicious to make with my zucchini. I remembered being given a recipe for moist, delicious zucchini bars many years ago. I searched through all of my old recipes to no avail, and then contacted my sister to see if she had it. Which, I’m happy to say, she did!
Zucchini Bars
- 3/4 cup butter
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 1/2 teaspoon baking powder
- 2 cups grated zucchini
- 1 cup coconut
- 3/4 cup chopped walnuts
- 1 3/4 cup flour
1. Cream the butter in a bowl.
2. Beat in the white and brown sugars.
3. Add eggs one at a time, mixing after each.
4. Beat in vanilla, flour and baking powder.
5. Stir in zucchini, coconut and nuts.
6. Spread evenly in well greased 9 x 13 pan.
7. Bake for 35-40 minutes at 350 degrees.
8. Frost with cinnamon frosting.
Cinnamon frosting
- 1 cup powdered sugar
- 2 1/2 tablespoons milk
- 1 1/2 tablespoons melted butter
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
1. Mix frosting ingredients well.
2. Allow to cool prior to frosting.
3. Cut into bars and share with family or friends
I was not disappointed! These bars were as delicious as I remembered them being. It is a recipe that I will definitely not allow to slip away again. I hope you find them as delectable as I do!
