Festive chickenAlways looking for new recipes for chicken?  Hopefully this chicken recipe will be perfect for you and your family!  The addition of dried beef and bacon give it a richer taste and make it special enough to serve the next time you’re having guests over for dinner.  It doesn’t require very many ingredients so you might have everything you need without a shopping trip.  That would definitely be a plus, wouldn’t it!

Festive Chicken

Ingredients:

  • 4 boneless chicken breasts
  • 8 slices bacon
  • 1 (4 oz.) package dried beef
  • 1 can of cream of mushroom or cream of chicken soup*
  • 1/2 pint sour cream

*I had never seen this combined soup before, but I happened to stumble upon this one on my last shopping trip and grabbed it up!  It was Campbell’s “Cream of Chicken & Mushroom Soup”, two of my favorite soups used in recipes combined into one!  I chose to use it in this particular recipe because I prefer the mixed flavor of the two, rather than one on its own.

Instructions:

Festive Chicken

Cover the bottom of a 10 x 10 or 12 x 12 greased pan with dried beef.

Festive Chicken

Wrap each chicken breast with a strip of bacon.

  • Place on top of the dried beef.
  • Mix together the soup and sour cream.

Place soup and sour cream mixture over the chicken.
  • Refrigerate overnight.
  • Bake uncovered at 275º for 3 hours.
  • Serve over rice or noodles.

Complete your meal by adding the vegetable of your choice.  I love broccoli and chose it, a green vegie seems complementary to the dish.  Though I didn’t add a bread with the meal tonight (watching those carbs!), I often do.
