Our garden has produced so many zucchini that it has been difficult to keep up with them.  Since I have so many, I have been using them in every way I can think of.  I have grilled them, baked them and used them in recipes.  My favorite thing to do in the kitchen however, is to bake desserts (I wish this weren’t true, but it is!), so of course I looked for something rich and delicious to make with my zucchini.  I remembered being given a recipe for moist, delicious zucchini bars many years ago.  I searched through all of my old recipes to no avail, and then contacted my sister to see if she had it.  Which, I’m happy to say, she did! read more….
