There’s nothing like the smell of baked cookies waffling through the house during the holidays! I always like to bake something gingery and these scrumptious, chewy ginger cookies are a family favorite. This is by far the best ginger cookie recipe I’ve found and they turn out great every time. Everyone says they are addicting so they don’t last long in our house!
SOFT CHEWY GINGER COOKIES:
Ingredients:
- 3/4 cup softened butter
- 1 cup sugar
- 1 egg
- 1/4 cup molasses
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 2 tsp ground ginger
- 3/4 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/4 tsp salt
- A little additional sugar set aside to roll cookies in
Directions:
In a mixing bowl cream butter and sugar until smooth. Beat in the egg and molasses. Combine the flour, baking soda, ginger, cinnamon, cloves and salt and gradually add to the creamed mixture. Roll into 1 1/2 inch balls and roll in sugar. Place 2 inches apart on an un-greased baking sheet. Bake at 350 degrees for 12-14 minutes or until puffy and lightly browned.
Additional Notes:
- I use a KitchenAid mixer so after creaming the butter and sugar I just add the additional dry ingredients straight into the mixing bowl. These cookies are so fast and easy to make!
- So cookies come out uniform in size I always use a kitchen scooper like this one…

Chewy factor is key for me in a good ginger cookie. They can’t be crispy! Look forward to trying this sometime.
