Looking for a new cake recipe?  Here are two old cake recipes that are so good I think they will quickly become your new favorites!  The Oatmeal Cake is my Mom’s recipe and the Texas Sheet Cake was my grandmother’s recipe.  Try one, or both, for your next get together with family or friends and let me know what you think!

Oatmeal Cake

Ingredients:

  • 1 cup oatmeal
  • 1 1/2 cups boiling water
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1/2 cup shortening
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups flour
  • 2 eggs
  • 1 tsp vanilla

1.  Grease and flour a 9 x 13 inch pan.  Preheat oven to 350 degrees.

2.  Place oatmeal in bowl, heat water to boiling and pour over oats.  Cover and set aside.

3.  Mix the remaining ingredients together.

4.  Add the oats and mix well.

5.  Place in 9 x 13 pan and bake at 350 degrees for 35 minutes.  Check for doneness with a toothpick in center of cake.  While the cake is baking mix the topping ingredients.

ToppingCake with note 2

  • 1/2 cup brown sugar
  • 1 stick butter
  • 1/4 cup evaporated milk
  • 1 cup nuts
  • 1 cup coconut

Put the topping on the cake as soon as it is baked. Optional:  Put under broiler until coconut is browned.

 

Texas Sheet Cake

This cake is so moist and delicious!  The buttermilk used in both the cake and frosting adds the perfect flavor. This is the one always requested by my oldest son and his wife for their birthdays.

Grease and flour a 9 x 13 pan.  Preheat oven to 350 degrees.Choc cake with note

Ingredients:

  • 2 sticks of margarine (1 cup)
  • 1 cup water
  • 4 tablespoons cocoa
  • 2 cups flour
  • 2 cups sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla

Melt two sticks of margarine, 1 cup water and 4 tablespoons cocoa in a medium sized pan.  Bring to a boil, pour over dry ingredients.  Add 2 eggs, 1/2 cup buttermilk and 1 teaspoon vanilla.  Mix well.

Pour batter into pan and bake for 30-35 minutes.  Check for doneness by inserting toothpick into center of cake.  Allow cake to cool.

Icing:

  • 1 stick margarine
  • 4 tablespoons cocoa
  • 1/4 cup buttermilk
  • 1 box of powdered sugar

Melt margarine in a small pan, add cocoa and buttermilk and bring to a boil.  Pour over one pound box of powdered sugar and mix well.  Pour icing over cake while icing is still warm.
